Sweet & Spicy Merlot Chili

Celebrate National Chili Day with this Sweet & Spicy Chili Recipe!

I absolutely LOVE cooking when I can get it ready and walk away from it for 5-8 hours, which is why crock pot recipes are the absolute best! There is nothing better than coming home from a long day at work to a fully cooked and ready to eat meal!

In honor of National Chili Day, February 25th, I thought I’d share one of our favorite Chili Recipes!

Sweet & Spicy Merlot Chili

Cook time 8 hours
Total time 8 hours, 30 minutes

This chili recipe is spicy at first and ends sweet with each bite! The flavoring of the merlot adds to the meat and brings robust "warmth" to the wholesome dish!

Ingredients

  • 1 Crock Pot
  • Olive Oil (For cooking meat)
  • Garlic Powder (For seasoning meat)
  • Chili Powder (For seasoning meat)
  • Onion Powder (For seasoning meat)
  • Black Pepper (For seasoning meat)
  • 1lb Lean Ground Beef
  • 1/2lb Lean Stew Meat (You can use regular stew meat, but we like how the lean meat is so tender)
  • 2 cans Bush's Chili Beans (Your choice of heat)
  • 1 can Rotel (Your choice of heat)
  • 1 bottle Merlot (Doesn't have to be expensive, alcohol cooks off anyway!)
  • 1/2 cup Sugar
  • 1 jar Jalepenos (Optional)

Directions

Step 1
Turn crockpot on medium setting. Combine both cans of chili beans, rotel (including juices), sugar, and wine in crockpot. Stir to mix all ingredients.
Step 2
Heat medium skillet to high heat and coat with olive oil. Add stew meat and season to taste with chili powder, garlic powder, onion powder, and black pepper. Cook ONLY long enough to lightly brown edges. Meat should not be cooked all the way through! Add meat to crockpot when lightly browned.
Step 3
Reduce skillet to medium heat, season, and cook ground beef until lightly browned. This should be more thoroughly cooked than the stew meat. Add to crockpot when lightly browned.
Step 4
Add jar of drained jalepenos (optional). Cook in crockpot on medium heat approximately 8 hours.
