Kid Friendly Cheesy Breakfast Sausage Balls

While we were visiting family in Louisiana this past Christmas, my father’s girlfriend made these delicious breakfast sausage balls. At first I couldn’t figure out exactly what they were…they seem like a biscuit, but they are cheesy and meaty…the texture seemed very strange, but I knew one thing, they were delicious! My son actually asked her if we could “have a to go bag and take some of these home with us,” and of course, she gave us the rest of them, but they were gone before we got home! Since we’ve been home, I’ve made them twice, and the second time I learned to double the batch or else I’d spend the rest of my week making more!

Cheesy Breakfast Sausage Balls

These Sausage Balls are the perfect combination for any breakfast. They are kid friendly and delicious! Easy to make and freezable, just grab a handful and throw them in the microwave for a quick and easy addition to breakfast!

Ingredients

  • 2 cups Pancake & Waffle Mix
  • 1lb Breakfast Sausage (Your choice of flavor - regular works just fine!)
  • 2 cups Shredded Sharp Cheddar Cheese

Directions

Step 1
Heat oven to 400°F. In large bowl, mix pancake mix, sausage and cheese, pressing together with hands. Mix will be very dry. You will need to work the ingredients together for a while to get them thoroughly mixed.
Step 2
Spoon out tablespoonfuls into your hands and form balls. When you get closer to the end, if there are still bits of pancake mix and cheese, add a bit to each meatball and firmly press together so as to use all of the mix. Place each ball on a baking pan. They won't expand, so they can be close together.
Step 3
Bake 13 to 15 minutes or until golden brown. Remove from pans to cooling racks. Serve warm.
